Apios Americana (American Groundnut)

A graceful, native perennial vine with a twining habit, Apios Americana produces fragrant maroon-chocolate flowers. Its sweet, starchy tubers, which are typically harvested in winter, can be eaten raw, boiled, fried, roasted, or prepared similarly to potatoes. Our plants come from a strain of LSU superior cultivars, known for their large tubers. Hardy in Zones 6-8.
