Oregano ‘Zaatar’ , also known as Syrian oregano , is a treasured heirloom variety , prized for its intense fragrance, its more spicy and complex flavor than classic oregano. It develops woody, lemony and slightly spicy notes , which make it an essential spice in Middle Eastern and Mediterranean cuisine .
Unlike milder oregano varieties, ‘Zaatar’ oregano has a powerful flavor profile , reminiscent of a natural blend of thyme, oregano, and marjoram , which clearly sets it apart from other varieties. It is particularly used in the spice blend called “zaatar” , combined with sumac and sesame seeds.
A perennial plant in mild climates and an annual in cold climates , it reseeds itself naturally and forms a lush aromatic bush , ideal for growing in open ground or in pots .
Oregano ‘Zaatar’ is native to the Levant , a region that encompasses Syria, Lebanon, Palestine, Jordan and Israel . Its name Origanum syriacum reflects its Syrian and Mediterranean roots .
Used since ancient times in cooking and traditional medicine , it was appreciated for its digestive and antiseptic properties . It was incorporated into meat dishes, flatbreads and sauces , while benefiting from its beneficial properties for health.
Even today, it remains an iconic herb in Levantine gastronomy , where it is often infused in olive oil or sprinkled on manakish breads and roasted vegetables .

Oregano ‘Zaatar’ prefers well-drained, poor to moderately fertile soil and full sun exposure .
Sow the seeds flat 8 to 10 weeks before the last frost , without covering them with soil, as they need light to germinate . Maintain a temperature of around 21C , with light humidity, for germination which takes between 7 and 14 days .
Cold stratification for 1 to 2 weeks is recommended to promote uniform emergence .
Once well rooted, transplant the young shoots into open ground , spacing them 30 cm (12″) apart and 30 to 45 cm (12-18″) between rows.
Water moderately , as this plant tolerates drought well and develops more aromas in dry soil .
The infusion of oregano ‘Zaatar’ is renowned for its digestive, antiseptic and relaxing properties .
